05.10.09 Mother's Day Brunch Cruise

Happy Mother's Day everyone!

Only got 4 1/2 hours of sleep...6:30am-11am.

Woke up, showered and got dressed for our Mother's Day Brunch Cruise in Stillwater, MN!

We picked up my mom and sister and headed out to Stillwater. Arrived at 1:15pm and I ran to get our reserved tickets while everyone else got in line to board the boat. We boarded the boat and got a great table next to the window on the second floor! The boat left at 1:30pm and we took many pictures while we were out on the deck...

The Jazz Band was great! They made the cruise such a joy!!!

We had fun taking photos out on the deck...the boat has three floors, I was pretty much only thinking about how to keep my skirt from blowing up as we were exploring the boat.

At 2pm the buffet was on. My first plate was a summer spinach salad with blueberries, blackberries, strawberries, red onion and almonds. Also had some cantaloupe, pineapple, strawberries and watermelon.

My last plate was nice and meaty! Carved roast beef, bruschetta chicken, baked cod with tartar sauce and a pumpernickel roll.

The brunch cruise finished at 4:30pm so we loaded up and headed over to Wallyworld to pick up some ice cream and milk to go with the beautiful Chocolate Fudge Mother's Day Cake my sister made! She works at Sam's Club and they decorated 500 cakes yesterday!

Got back to our house by 5pm and we had cake, ice cream and milk then opened presents. We got my mom $100 in gift certificates to Belladerm Medspa in Maple Grove, MN...oh la la.

03.19.09 Oikos Organic Greek Yogurt for Breakfast!

My breakfast this morning was compliments of Kristina at Stonyfield Farm. I greatly appreciate the coupons she sent me as I am always looking to try new healthy foods to add to my diet.

I was excited to try an Oikos organic Greek yogurt since organic foods have recently become a huge part of my life. This is currently the only organic Greek yogurt on the market!

I picked up a 5.8oz 0% plain at our local Cub Foods store. Checked the label and it only has 100 calories, 7g carbs, 17g protein and a good source of calcium. 

I mixed in a few ounces of organic blueberries and a packet of Truvia. The consistency is luxuriously thicker than I'm used to and the flavor was nice and tart. This was a quick, delicious breakfast for me and I felt great after eating it and will defintely purchase this again.

02.17.09 Dinner

Later on for dinner I made myself two pitas: each with 3 slices Hormel Natural Turkey Breast, 1 Tbsp Tribe Roasted Garlic Hummus, 1/8 cup Kraft 2% Italian Cheese, and 1 1/2 cups of Spinach. Also had a half cup of Cabot Cottage Cheese with a small cup of Del Monte NSA Peaches mixed in and a Hansen's Diet Pomegranate Soda to wash it all down.


Later on for my snack I had a cup of Trader Joe's Europen Style Yogurt sweetened with a packet of Truvia and 1/4 cup of Bear Naked Fit Triple Berry Crunch Granola with 3 oz blueberries mixed in.

02.15.09 Dinner

It got busy again after lunch so I snacked on an ounce of Cocoa Roast Almonds while I was working. Later on it quieted down and I found some interesting websites and recipes through Food Blog Search. 

Around 4:30am we finished up our scheduled server checks and then I fled down to the breakroom to make myself a luxurious bowl of yogurt: 1 cup Trader Joe's 0% Greek Yogurt, 3oz Blueberries, 1 packet Truvia, and Cinnamon. Delicious!!!

Leaving work soon to go home and get some sleep:)

02.14.09 Snack

The rest of the night went pretty slow and I did my best to stay awake since I didn't get much sleep the night before. Server maintenance finished up and tickets slowed and we did our regular server checks and around 5am I went down to the breakroom and fixed myself a luxurious bowl of yogurt made up with a cup of Trader Joe's 0% Greek Yogurt, 3oz of blueberries and sweetened with a packet of Truvia.

02.13.09 Dessert/Snack

Around 3:30am I ate an ounce of Cocoa Roast Almonds at my desk.

At 4:45am I went on my last break and made myself a bowl of yogurt: 1 cup Trader Joe's European Style Yogurt, 3oz blueberries, 1/4 cup of Bear Naked Fit Triple Berry Crunch Granola and I sweetened it with 1 packet of Truvia.

One more hour to go and I'll be off work and heading home to get some sleep:)

02.09.09 Dinner

Got a break around 3:40pm and went down to the breakroom and fixed myself a cup of TJ's European Style Yogurt with 2oz blueberries and added a pack of Truvia. A coworker of mine was also on break so we chatted awhile. Went back upstairs and got back to work.

The rest of the day was pretty busy as well...I had to reboot a few servers in my building and I had to go over to the other serving building and reboot a hung server.

What a hectic Monday, I was so excited to leave at 6pm! Signed out of everything and grabbed my TJ's cooler bag and headed down to bring the rest of my food home for my 3 day break.

Left work and headed to Cub Foods...bought 2 pkgs Hunt's No Sugar Added Chocolate Pudding $2, Mushrooms $1.50, Soup ($9 - $3 coupon = $6), South Beach FiberFit S'mores Bars ($2.50 - $2 = $0.50), Big Container of Whole Grain Couscous $6, Green Onions $0.50, Broccoli, Mushroom, Pepper, Onion Veggie Mix $4, Blue Bunny No Sugar Added Banana Split Ice Cream ($3.50 - $1 = $2.50), Wild Harvest Organic Soy Milk ($3 - $1 = $2), 2 Atkins Granola Bars ($3 - $1 = $2, Part-Skim Ricotta Cheese $2. Total bill = $29

Stopped at Rainbow Foods on the way home and bought two pkgs Imagine Soups...Tomato Basil and Butternut Squash ($7 - $1.50 coupon = $5.50) and 1 pkg fresh Chicken Breast $4.50 = $10

Got home, put groceries away and started making dinner. Cooked up 1.5lbs fresh Chicken Breast and cubed it up. Steamed 2 bags of the Broccoli, Mushroom, Pepper and Onion mixed Veggies, and cooked 1 cup of couscous. Mixed everything together and added the Thai Green Curry Paste and let the couscous, veggies and chicken soak it up. It was an excellent meal with powerful flavor.

After dinner we watched the latest episode of Hell's Kitchen and it was really entertaining. And later on for dessert we had a cup of the Blue Bunny No Sugar Added Banana Split Ice Cream.

I have the next three days off and don't work until Friday night - Hurray! :)

02.08.09 Breakfast, Lunch & Dinner

Only got in 4 1/2 hours of sleep...12:30pm to 5am. Woke up and hurried to get out the door. Arrived at work at 5:45am and ran upstairs and got to work. It was a pretty quiet morning so I caught up on my blogging, checked my email, looked at the Sunday ads for the week...found and printed off some corresponding coupons.

Around 9:15am I went upstairs to switch out the server tapes for the Sunday ones the Saturday tapes this week were the full monthly backups. 

After that I went down to the breakroom and made myself a Thomas English Muffin with Smucker's Natural Peanut Butter and Low Sugar Apricot Jam. Had a glass of Calorie Countdown with it.

Ran upstairs and got back to work. Received several server tickets in our queue that I dealt with and also had to verify COMS was back up and running.

Went to lunch downstairs at 12:30pm and made myself two pitas each with 3 slices Hormel Natural Turkey Breast, 1 Tbsp Sabra Roasted Red Pepper Hummus, 1/8 cup Kraft 2% Italian Cheese, and 1 1/2 cups of Spinach. Also had a half cup of Friendship Cottage Cheese with some Del Monte No Sugar Added Peaches. Drank water with my meal.

The afternoon was pretty slow so I paged through a few magazines and paid some bills. Went down to the breakroom around 3:30pm and made myself a bowl of TJ's European Style Yogurt with 2oz blueberries and 1/4 cup of Bear Naked Fit Granola.

After my snack I surfed YouTube for Avocado Spread Recipes since I had 3 perfectly ripe avocados ready to use. I ended up choosing a Lime Salsa Avocado Spread and will put it on top Turkey Burgers on Arnold Sandwich Thins.

Left work around 5:50pm and got home at 6pm and started making dinner. Got my 3 avocados out and scraped out the fruit into a bowl and mashed it up...added 2 Tbsp Lime Juice, 1/2 tsp sea salt and 1 cup of mild salsa. While I made the avocado spread I had the Turkey Burgers going. Didn't take me long at all.

After dinner we all relaxed on the sofas and watched Ugly Betty...it was a very interesting episode. Then later on for dessert we had South Beach Diet S'mores Bars so it felt kinda like a BBQ dinner. 

We were going to watch Hell's Kitchen but I was falling asleep at 8pm due to my lack of sleep last night. Going to bed early...

02.06.09 Breakfast & Lunch

Slept from 9pm - 4am. Woke up and got all ready for work. Couldn't find my badge anywhere...ended up being under the blanket at the end of the bed...argh! Gathered my food to bring to work since I work all weekend...yogurt, peaches, the last crumpet...

Arrived at work and got to work straight away. It was a very busy morning with Peoplesoft and EWCD changes. Ticket overload...I got to take a break at 9am so I ran down to the breakroom and made myself a nice bowl of McCann's Oatmeal with Cinnamon and a packet of Truvia. Had a glass of Calorie Countdown with it...I like the bubble in the center of my glass:)

The rest of the morning was just as busy and our supervisor got a new laptop that was an image only so I had to help her get all the programs installed on it that she would need. So I did that and took tickets at the same time. I was so excited to leave at noon for my hour lunch!

Walked over to the quad, it was a beautiful 40 degrees out! It felt great!! I cannot wait from Spring to get here!!! 

Got to the quad and got six laps in and ran into an old coworker of mine and we chatted and caught up. 

Then I walked back to my building, went in the breakroom and made myself some lunch...a cup of Health Valley Organic Chili, a Crumpet, a bowl with a half cup of Friendship No Salt Added Cottage Cheese with Del Monte No Sugar Added Peaches and a SoBe Lean Green Tea I picked up and brought back with me.

Later on for my snack I had one cup of Trader Joe's Nonfat European Style Yogurt with 2 oz of blueberries and a quarter cup of Bear Naked Fit Triple Berry Crunch Granola. (Sorry for the blurry picture)

I hope the rest of my afternoon goes by quickly...

02.03.09 Afternoon Snack

This has been a very long day...I can't wait to get home make dinner and then relax...maybe watch House:) 

I got a break around 4pm so I went down to the break room and made myself a luxurious bowl of yogurt with blueberries and a quarter cup of Bear Naked Fit Triple Berry Crunch. (250 cal, 8g fat, 5g fiber, 14g protein)

01.29.09 Breakfast, Lunch & Dinner

I slept in Thursday morning and got 7 hours of sleep...6:00am - 1:00pm. After eating so many calories yesterday I surprisingly didn't gain any weight but didn't lose any either. 

For breakfast I made myself a Thomas English Muffin with Trader Joe's Unsalted Peanut Butter and Strawberry Jam.

Went to pickup Angie at Target around 1:30pm and drop her friend Abby off at home. Angie wasn't feeling well at all so I brought her home and she went to bed. Dave woke up not feeling well either so I made him a Thomas English Muffin with PB&J as well.

Left around 4:45pm, then got gas for $1.81/gal and picked up a Grape Powerade Zero and went to bring my timesheet over because I forgot to mail it. 

Returned some sweater tights at Sears cause they ended up not being long enough for me. 

Then I went to IKEA to return the over the couch arm remote organizer, a rod that mounted to the wall for hanging utensils, hooks for the rod and a steel magazine rack. I got store credit because we lost the recipt so I bought a floor lamp with a reading light for the bedroom and a baking pan with a rack. They were sampling Gille-Havre Biscuits so I had one.
Went shopping at Rainbow Foods and picked up the new South Beach FiberFit S'mores Bars...they are so good and contain no HFCS!

I had one...very hard to resist eating more than one!!!

For groceries I bought: Sugar Snap Peas, Mushrooms, Eggplant, Oranges, Wholly Guacamole and Wholly Salsa, Kashi Go Lean Strawberry Waffles, Dannon Light & Fit, Lean Turkey Ham, 4 packages of cheese at 99 cents a piece!, Maxwell House Coffee, Near East Mushroom Couscous, Low Sodium Pizza Sauce,  Arnold Sandwich Thins, Chicken Noodle and Tomato Soups, Vitamin C Tablets, Eggs, Diet Coke and the South Beach FiberFit S'mores Bars.

I came home and heated up some Chicken Noodle Soup for Dave and Angie. Whipped up a cup of Yogurt and Blueberries for each of them. Had a half cup of yogurt and blueberries myself. 

Later on I made myself a Kirkland Signature Turkey Burger with 1/3 cup cheese, raw onion, lettuce and some Steel's Gourmet Sugar Free Barbecue Sauce on an Arnold Sandwich Thin.

We watched the latest episode of Biggest Loser. Sad to see the orange team go, but you could tell the brown team wanted to be there more and the team members were appalled at what Daniel said about not really wanting to be there.

Then we watched the latest episode of CSI off our DVR.

It was definitely time for dinner after that...I made a turkey and veggie stirfry with peanut sauce. (cooked and broke up 4 Jenny-O Turkey Burgers, Steamed 8oz of Broccoli, Cauliflower, and Carrot Mix, 8oz Trader Joe's Pepper Mix and 8oz of Sugar Snap Peas, then added about 8 Tbsp Whole Foods 365 Peanut Sauce and walah...dinner was served.) Had some sugar free orange drink mix with 100% Vitamin C to drink with the meal.
