01.31.09 Breakfast at Jamba Juice, Lunch at Ruby Tuesday, & Dinner at Home

Got in 9 hours of sleep! 12:30am - 9:30am! Beautiful Day Out! 45 Degrees:)

Had to run out to two banks...needed to withdraw money at one and deposit it at another. 

After that I headed to Jamba Juice again, since it was the last day my printable coupon for steel cut organic oatmeal was good...a cup for a buck. I got the Fresh Banana Steel Cut Oats and a Strawberry Nirvana sixteen. (450 cal, 4g fat, 9g fiber, 16g protein)

After breakfast I went to Cub Foods because Amanda (our dog) needed dog food. I also bought two cans of Healthy Valley Organic Chili ($1/2 coupon = $4), South Beach Mocha FiberFit Bars ($2 off coupon at South Beach Site = $0.50), 2 jars Smuckers Natural Peanut Butter $4, 1 box Cinnamon Puffins $3, 1 box Peanut Butter Puffins $3, 2 Boxes Murray SF Shortbreads ($5 - 0.50 = $4.50), Calorie Countdown ($4 - $1 off any milk coupon from Murray Shortbreads box = $3), Grocery Total = $22

I was on my way to Rainbow next but was diverted by a World Market Going Out Of Business Sign!!! I loved that store...they have the most beautiful gift wrap and exotic foods...there is no other store in Minnesota like it! Everything was 10-40% off and the whole store was pretty much picked over...I bought Green and Yellow Curry $4, 2 Cans Pacific Organic White Bean Soup $4, 2 Cans Pacific Organic Chicken Fajita Soup $4, 2 boxes Lite Harvest Zesty Lemon Cookies $7, and a bar of 99% Cacao Dark Chocolate $2...Total was $21.

Ate one of the South Beach Mocha FiberFit Bars...

Last stop was Rainbow because it was the last day of the soup sale. Got six cans of soup ($13.50 - $5/4 - $2 - $1 = $5.50), Kemp's has come out with a No Sugar Added Ice Cream Sandwich! $3.50, and Cheese was on sale, got 4 - 8oz bags for $4! Total = $13

Since I had everything cold in a freezer bag I stopped by our old place to work outside for an hour since it was a lovely 45 degree day! 

I shoveled and chipped ice so I could open the door to get inside our screened porch in the back. I got our Amana Grill and Dave's Welder and Tool Chest out and loaded the Welder and Tool Chest in the back of the van and ratcheted the grill to the rectangular platform on the back of the van. Then I went inside to the kitchen and packed up more of our kitchen stuff we were missing and our Michael Graves Dish Drainer.

Drove home to the new place and unloaded everything. Dave and Angie were feeling much better so we went out to Stillwater so Angie could shop for khaki pants for work at Kohl's. I helped her find 3 pairs that fit her well...she's a size 8 petite and also found her one pair of comfortable jeans. Also, I found two pairs of sweater tights that actually fit me...long enough:)

While we were in Kohl's, Dave surprised us by picking up our friend Anna...a funny, older lady that used to live in the same apartment complex as us about 7 years ago in Stillwater. We all went to Ruby Tuesday for a late lunch and ate really well.

I had the White Bean Chicken Chili Soup, plate of salad, one more plate with a mini salad and cottage cheese with sunflower seeds, and a Diet Coke.



After that we went to Walmart and got a few things we needed...Tuna was 68 cents a can...best price I've seen!, Lean Ham, and Yogurt. We then dropped Anna off at her place and went home since Angie needed to get some sleep since she works at 4am tomorrow morning.

Dave and I dropped her off and went to Carmike to see Bride Wars. It was a really good movie! Lots of funny scenes...Kate and Anne did a great job! Chris Pratt was Anne's fiance...he was Amy's brother on Everwood...and Steve Howie was Kate's fiance...he was Cheyenne's husband on Reba. Kate's brother was Bryan Greenberg...he was Nick Garrett from October Road. 

I'm glad we had to chance to watch it on the big screen...this was the first movie we've gone out to see this year.

Stopped at Target on the way home since we were out of cough drops $1...also bought some body wash $4, Sugar Free Sweethearts $2, No Sugar Added Del Monte Peach Cups $2, and two South Beach Diet Pizzas ($5 - $2 off coupon = $3) = $12

Came home and baked the South Beach Diet Pizzas and ate those for dinner and watched the latest Giada at Home off our DVR.

Going to bed earlier since I have to pick up Angie at 8am and work at 6am Monday morning!

01.30.09 Dinner

Later we watched the latest Wife Swap off the DVR and there was a well-educated, health conscious family from California trading mom's with a Paintball, ATV loving family from Missouri. The father from the California family was an extremely rude British guy that was very condescending...the least one human can expect from another is civility. On the other hand the mom from the California family at least tried and had some heart in the experience.

We all felt snackish after that and in honor of watching House earlier and Hugh Laurie's great performance as always...I made us Duffy Crumpets with Smucker's Natural Peanut Butter and Strawberry Jam:)


For Dinner I had a Turkey Burger with cheese, onion, lettuce and Steel's Barbecue Sauce.

Dessert was a cup of Edy's Slow Churned No Sugar Added Neopolitan Ice Cream:)

We watched the latest episode of House off the DVR.

Dave and Angie had a couple glasses of V8.

I had my Chobani Greek Yogurt with 3oz blueberries.

01.30.09 Lunch

After my shopping trip to Whole Foods I went to Rainbow Foods and bought six more cans of low sodium soup because they have a really good sale...$5 off when you buy 5 cans plus I had coupons ($13.50 - $5 - $2 - $1 = $5.50. 

Also bought Japanese Breadcrumbs $2, Wheat Crackers $3, Oatmeal (B1G1 Free) $2.50, 2 cans Turkey Chili $2, SF Orange Drink Mix $2.50, V8 Juice $2.50, Dannon Light & Fit $3, Blueberries $3, 3lbs Chicken Breast at $1.99/lb, Lean Turkey Sausage 3.50, 2 Ltrs Diet Canada Dry $2.50, Duffy's Crumpets $2.50 and a Mixed Berry Powerade Zero 79 cents. Did my Valentine Card Shopping too...$12 for 4 cards after B3G1 Free:) $55.00

Ran into Walgreens next door and got a nice box of Russell Stover Sugar Free Valentine Candy for half price, a package of Sugar Free Heart Peeps, got another bottle of my new favorite Curel Lotion ($1 off coupon) and got 6 South Beach Diet Bars on clearance for $1 each! $20

Ate the package of Peeps and drank the Powerade Zero in the van on the way home...



Got home and made Eggplant Parmesan for lunch!

(2 medium eggplants cut into rounds, 1 can NSA Hunt's Sauce, 8oz container of mushrooms, 4oz mozzarella cheese, 1/4 cup parmesan cheese, olive oil, Japanese Breadcrumbs and one IKEA roasting pan with rack)

I cut the eggplant into rounds, salted both sides because the salt helps take the moisture out of the eggplant, placed them on the rack in two layers with plastic wrap in between and then weighted the eggplant down with soup cans to help drain the bitter flavor...let it sit for 30 mins.

I rinsed the salt off of the eggplant and dried it.

I got the egg mixture and japanese breadcrumbs ready.

Heated the pan on medium with olive oil, Dipped each eggplant round into the egg mixture, then the breadcrumb mixture and placed them in the pan and fried until golden brown.

Placed the eggplant rounds on the rack to drain.

Took out my IKEA shallow roasting pan.

Lined it with 1/2 cup Hunt's NSA Sauce.

Placed six eggplant rounds on the sauce, put sauce on the eggplant, layered about 6-8 mushrooms on top of that, then sprinkled some mozzarella cheese.

For the second layer I put six more eggplant rounds, used another cup of sauce, about 6-8 mushrooms per round and sprinkled some more mozzarella cheese.

For the final layer I put on one more layer of eggplant rounds, another cup of sauce, the rest of the mushrooms, sprinkled some mozzarella cheese and then sprinkled 1/4 cup parmesan on top.

Baked in a 350 degree preheated over for 30 minutes and Voila!...dinner was served!

Dinner was so good! Dave and Angie loved the Eggplant Parmesan and Manda (Our Dog) loved the cheesy saucy bits (no mushrooms) that hit the floor!

01.30.09 Breakfast at Jamba Juice

I got in 9 hours of sleep...2:30am - 11:30am. Woke up and got dressed and headed out to do some grocery shopping.

First stop was Jamba Juice since I had a cup for a buck coupon for their oatmeal. 

I got the Blueberry & Blackberry Organic Steel Cut Oats and a Jamba Light Berry Fulfilling. (450 cal, 4g fat, 10g fiber, 15g protein) So delicious! I would definitely go there again!!!


I ate my breakfast and headed to Whole Foods since I had a coupon for $5 off $30:) 

Items I bought were: 3 Avocados (99 cents each), Kashi Summer Berry Granola ($1 off), Bear Naked Fit Triple Berry Crunch Granola, Liquid Smoke, 365 Peanut Sauce, Unsweetened Almond Breeze, Iodized Sea Salt, Chobani 0% Greek Yogurt, Friendship No Salt Added Cottage Cheese (60 cents off), 4 Larabars I haven't tried (Cinnamon Roll, Ginger Snap, Coconut Cream Pie, and Banana Bread, also there were coupons on each of them for 40 cents off), and 2 Think Thin Bars in Crunchy Peanut Butter and Creamy Peanut Butter...total bill was $27:D

01.29.09 Breakfast, Lunch & Dinner

I slept in Thursday morning and got 7 hours of sleep...6:00am - 1:00pm. After eating so many calories yesterday I surprisingly didn't gain any weight but didn't lose any either. 

For breakfast I made myself a Thomas English Muffin with Trader Joe's Unsalted Peanut Butter and Strawberry Jam.

Went to pickup Angie at Target around 1:30pm and drop her friend Abby off at home. Angie wasn't feeling well at all so I brought her home and she went to bed. Dave woke up not feeling well either so I made him a Thomas English Muffin with PB&J as well.

Left around 4:45pm, then got gas for $1.81/gal and picked up a Grape Powerade Zero and went to bring my timesheet over because I forgot to mail it. 

Returned some sweater tights at Sears cause they ended up not being long enough for me. 

Then I went to IKEA to return the over the couch arm remote organizer, a rod that mounted to the wall for hanging utensils, hooks for the rod and a steel magazine rack. I got store credit because we lost the recipt so I bought a floor lamp with a reading light for the bedroom and a baking pan with a rack. They were sampling Gille-Havre Biscuits so I had one.
Went shopping at Rainbow Foods and picked up the new South Beach FiberFit S'mores Bars...they are so good and contain no HFCS!

I had one...very hard to resist eating more than one!!!

For groceries I bought: Sugar Snap Peas, Mushrooms, Eggplant, Oranges, Wholly Guacamole and Wholly Salsa, Kashi Go Lean Strawberry Waffles, Dannon Light & Fit, Lean Turkey Ham, 4 packages of cheese at 99 cents a piece!, Maxwell House Coffee, Near East Mushroom Couscous, Low Sodium Pizza Sauce,  Arnold Sandwich Thins, Chicken Noodle and Tomato Soups, Vitamin C Tablets, Eggs, Diet Coke and the South Beach FiberFit S'mores Bars.

I came home and heated up some Chicken Noodle Soup for Dave and Angie. Whipped up a cup of Yogurt and Blueberries for each of them. Had a half cup of yogurt and blueberries myself. 

Later on I made myself a Kirkland Signature Turkey Burger with 1/3 cup cheese, raw onion, lettuce and some Steel's Gourmet Sugar Free Barbecue Sauce on an Arnold Sandwich Thin.

We watched the latest episode of Biggest Loser. Sad to see the orange team go, but you could tell the brown team wanted to be there more and the team members were appalled at what Daniel said about not really wanting to be there.

Then we watched the latest episode of CSI off our DVR.

It was definitely time for dinner after that...I made a turkey and veggie stirfry with peanut sauce. (cooked and broke up 4 Jenny-O Turkey Burgers, Steamed 8oz of Broccoli, Cauliflower, and Carrot Mix, 8oz Trader Joe's Pepper Mix and 8oz of Sugar Snap Peas, then added about 8 Tbsp Whole Foods 365 Peanut Sauce and walah...dinner was served.) Had some sugar free orange drink mix with 100% Vitamin C to drink with the meal.

01.28.09 Dinner

It was a pretty quiet night. I was looking for a healthy eggplant parmesan recipe since I have one from Trader Joe's. I came across a six episode series of funny cooking videos - http://www.proatcooking.com/ and a 1 minute eggplant parmesan Alton Brown video.

I've been listening to streaming radio on the net and dealing with automated server alert tickets and did server and app checks.

Got hungry around 3:30pm so I had some Select Harvest Italian-Style Vegetable Soup with 7 Kashi crackers which was 165 calories.

Later on I had an ounce of Cocoa Roast Almonds which was 150 calories and a cup of Hot Chocolate which was 25 calories.

That brings my total to 2,386 calories...we'll see what the scale says tomorrow. 

I'm leaving work in an hour, going to bed and will be enjoying the next four days off as I come back to work Monday morning!

01.28.09 Snack

Even after eating all of that at Old Country Buffet my stomach started growling around 10pm and I had a break to go down and get something at 10:30pm. 

I made myself a Thomas English Muffin with a Tbsp of Smucker's Natural Peanut Butter and Apricot Jam. Had a Dannon Light & Fit with an ounce of blueberries and a glass of Calorie Countdown. It was nice and filling...hope it will hold me over until at least 2am. Total: 336 calories, 12g fat, 10g fiber, 24g protein. Making my calorie total 2,046 now.

01.28.09 Brunch at Old Country Buffet

Got in 7 hours of sleep 6:30am - 1:30pm. Dave picked up Angie from work and came back home. I checked finances and paid the last of this month's bills.

Angie showed me her food log and did very well today. She's currently 5'1 and 145lbs. She has eaten 800 calories so far today and her meals looked pretty balanced. I edited my healthy food and snack grocery list and printed her off a copy so she has some ideas of what she can buy for lunch at Target.

Dave, Ang and I decided to go to Old Country Buffet for lunch. O_o We got there at 3:25pm in time to pay lunch price which is $25 for the three of us.

I started off with a Taco Salad. (Lettuce, 2oz Chicken Breast, 1/2 cup Pico De Gallo, and 1/8 cup Cheese) 200 cal

Second, I ate about 3oz fish and about a cup of green beans.  200 cal

Third, I ate about 6oz of the Sirloin Steak, used half the horsey sauce, half a Red Pepper, and two rounds of Zucchini. 500 cal

Fourth, I had a cup of cottage cheese with a Tbsp sunflower seeds, half cup of cantaloupe and a half cup of pineapple.  270 cal

Fifth, I had a cup of sugar free chocolate pudding with a piece of no sugar added chocolate mousse mixed in. 250 cal


Lastly, I had about a cup of fat free frozen yogurt with some apples mixed in. 200 cal

Old Country Buffet = approx 1,620 cal!!!

Later we went to Walgreens and I bought some Curel 24 hour Continuous Comfort fragrance free lotion, 1 pack of Sugar Free Marshmallow Peep Hearts and 3 Russell Stover Sugar Free Chocolate Marshmallow Hearts. Angie also bought some St. Ives Oatmeal & Shea Lotion.

I ate one Sugar Free Marshmallow Peep Heart. 20 cal

Also had one Sugar Free Chocolate Marshmallow Heart. 70 cal

My BMR is 1,790 calories. My Daily caloric needs is 2,460 calories according to my activity level.

I have already eaten approx 1,710 calories! :(

So I shouldn't eat more than 750 calories the rest of the night...then I'll see what the scale says tomorrow.
