04.25.09 Breakfast, Lunch at Simply Fun Fundraiser, Snack and Dinner at Home

Hi everyone!

Got in 8 hours of sleep 2:30am-10:30am:)

Woke up and just had to weigh myself...I gained exactly one pound from what I ate yesterday!!! Aaargh:(

Took a shower, got dressed for the fundraiser game party and ate a ThinkThin Brownie Crunch Bar for breakfast.



Had a great time at the Fundraiser party...we played many different games that
Simply Fun made. First was Take Your Pick then Linkity and last was Eye to Eye and the host presented the other games they sold as well. We ended up purchasing Kahootz!Farkel & More and a donation for the Simply Caring Foundation. After all the fun we had a potluck. I had a sloppy joe, a half cup of Chex Mix and about a cup of fruit salad.

After the party we hit Home Depot to buy a new compact fridge/freezer combo with the American Express points we cashed in for Home Depot gift cards.

Since I have many readers overseas who cannot believe how tall I am, Dave took a picture of me in front of the Home Depot height chart;)



After Home Depot we went over to Trader Joe's and I picked up a new TJ's Organic 0% Greek Yogurt and a Kind Nut Delight Bar. I crumpled up the Kind Bar and mixed it into my yogurt! Finally bought that Trader Joe's bag that my coworker asked me for.



Then we headed to Brooklyn Park to setup the new fridge/freezer for Grandma. She had a minifridge with a tiny freezer before and she dearly wanted freezer room to be able to put large containers of ice cream and bags of frozen vegetables. She was so thrilled with her new setup but the microwave was too high so Dave came up with the idea of putting it inside her pantry cabinet and it actually fit and was the right height for her!

Took Grandma to Cub for groceries...which, you guessed it...included ice cream and frozen veggies and then I ran into Target for a TV tray for her and picked up a box off 100 cal packs of Cocoa Roasted Almonds.

Had one:)


Then we dropped her off and headed home and for dinner I had two pitas with Kirkland Chicken Breast Strips, shredded Light String Cheese, Hummus & Spinach.


Going to bed fairly early tonight since we're going to church in the morning and I'm hanging out with my sis at MOA!

02.15.09 Dinner

It got busy again after lunch so I snacked on an ounce of Cocoa Roast Almonds while I was working. Later on it quieted down and I found some interesting websites and recipes through Food Blog Search. 

Around 4:30am we finished up our scheduled server checks and then I fled down to the breakroom to make myself a luxurious bowl of yogurt: 1 cup Trader Joe's 0% Greek Yogurt, 3oz Blueberries, 1 packet Truvia, and Cinnamon. Delicious!!!

Leaving work soon to go home and get some sleep:)

01.15.09 Breakfast, Lunch at Baker's Square & Dinner

01.15.09 Breakfast

I got 7 hours of sleep. Woke up and got ready to go. It was freezing out! -20 below!!! 

I had promised my mom I would drive her over to my Grandpa's new Care Center so we could get his paperwork done. I split one of those Cinnamon Raisin South Beach Bars I had bought at Walmart last night with my mom.

01.15.09 Lunch

I picked up my mom at 11am and we headed over to to my Grandpa's new place. 

We drove by it on the way to JCPenney to buy some new clothes for him. It was a really nice looking place.

Got to JCPenney's and they were having a 70% off sale...we bought him two pairs of warm, Nike jogging pants, two wool, fleece lined long sleeve button up shirts and two bags of socks.

For lunch my mom treated me to Baker's Square. I had a cup of green chili soup (accidentally deleted the picture), Chicken and Vegetable Stirfry and a slice of Sugar Free Banana Cream Pie;) Delicious!!!

01.15.09 Dinner

We got all the paperwork done that was needed and visited my Grandpa for awhile and he really seemed to like the new place. Also brought over several pictures for the maintenance guy to hang up in his room. 

Left the Care Center and my mom was thirsty so I stopped at Super America and bought her a Diet Dr. Pepper and a bag of SF Russell Stover Coconut. I ate two of them...

Dropped my mom off and headed home.

Got home around 4pm and Dave, Cody and I headed over to the old place to get some more work done. Picked up some Diet Ginger Ale for Cody's unwell dad, who is staying at the old place for awhile. Dropping off Cody since his Grandma is picking him up and taking him to see Sesame Street on Ice.

We got there and tarped and fastened our two sofa bottoms so they would be ready to go. I ended up taking apart our recliner and loading it, we also loaded our wooden file cabinet, our office supply cabinet and one of our lamps from IKEA along with some kitchen supplies we had been missing!

01.15.09 Dinner

Got home and we unloaded the truck and for dinner I made us pitas stuffed with some of TJ's Chicken Sausage, Mozzerella Cheese and Tabbouli. It was a nice, light meal. 


For dessert we had the rest of the NSA Blue Bunny Banana Split Ice Cream. And we got part way through watching the Biggest Loser.

01.11.09 Dinner

For my afternoon snack I had 1oz cocoa roasted almonds and a cup of hot cocoa.

Left work at 6pm and started driving the other way to the old place but then I remembered that I was going straight to the new place so I turned around:)

Got home and hooked up our cordless phones and the wireless router. Pumped up the Aerobed in the guest room and put sheets on it since Angie's little brother, Cody was spending the night.

Went to the main floor and watched the other half of the Biggest Loser since I got tired part way through last night. What a twist...two couples got to stay and the remaining nine couples had to send one person home with the possibility of bringing them back after 30 days. This will be interesting...

For dinner I made myself a wrap with a La Tortilla Low Carb Wrap, 1 Tbsp Roasted Garlic Hummus, 1/2 cup Mushrooms, 3 slices Hormel Natural Turkey Breast, 1/4 cup reduced fat italian cheese, and 1 cup of spinach. I also cut up 1 1/2 cups of cantaloupe and had a Diet Hansen's Ginger Ale with my meal. (1 wrap = 210 cal, 8g fat, 9g fiber, 26g protein; Cantaloupe = 80 cal, 0g fat, 2g fiber, 2g protein)

Later on I had 7 of TJ's Soy & Flaxseed Tortilla Chips with 2 Tbsp of their smoky Chipotle Salsa with the rest of my Ginger Ale - YUM! (7 Chips + 2 Tbsp Salsa = 150 cal, 8g fat, 4g fiber, 6g protein)

12.22.08 My intro post...

Hi, my name is Becky and I'm 26 years old, 6'3 and currently 208lbs:) I am starting this blog as another means of holding myself accountable. 

I have struggled with my weight for a very long time. From elementary school on I was pretty active and involved in sports but started to overeat around the time I was 12 years old. 

I graduated high school in 2000 weighing over 300lbs. Soon after I managed to lose 50lbs within 6 months on a low carb diet. 

Then a year later I started college, a full-time job and an internship simultaneously and managed to gain it all back and then some...tipping the scales at 341lbs! 

I was under a great deal of stress and went out to eat for lunch with coworkers and for dinner to buffets and fast food joints on a regular basis. 

I ate a lot of Mac & Cheese, Ramen, Giant bowls of cereals with a lot of 2% milk, cake, cookies, and candy. 

My mom had fresh baked goods in the house all the time that were hard to resist.

Although my mom did always make sure I got my vitamin pill and banana in the morning. 

Overall I just ate way more carbs, sugar and fat than my body needed.

I was inspired to get healthier because my father had diabetes which eventually led to kidney failure and he was laid to rest right before Christmas in 2001 at the age of 52. 

Then in 2005 my mom found out she had diabetes and took off more than 100lbs in a year. 

I knew I had to change my lifestyle for my own good or I was headed for health problems myself.

In 2006, after things settled down and I was done with college and started my full-time job working at 3M I was determined to eat healthy and exercise. 

I tried several different diets and journals but didn't have any success until June of 2007 when I started exercising regularly and cutting out refined grains and sugar.

One year later I had lost 100lbs and was not considered obese anymore. So then it was my goal to lose enough weight to feel good and have a healthy BMI of 25 or less. I have 10 more pounds to lose:)

I started out on Atkins for my dieting plan but it morphed into South Beach and then it morphed again into healthy carbs, lean proteins, low fat/good fats and fruits and veggies which is what I'm going to stick with.

Well, I really love good food now...surfing food blogs, reading health magazines, watching Food Network, being excited to scope out what's new at Trader Joe's, collecting recipes and making them over into healthier versions and habitually visiting CalorieKing and FitDay.

I hope to blog a lot about my life in Minnesota and healthy eating!
