05.29.09 Breakfast, Lunch & Dinner

Back to work all weekend through Monday. Only got in 6 hours of sleep from 10pm-4am. Got dressed, grabbed a Kashi bar and headed to work.

Got there on time and ate my Pumpkin Pie Kashi bar for breakfast.

Had a very busy Friday morning with Citrix, Peoplesoft, Siteminder, Terminal Server and UNIX issues. Also had blade server training but that was actually a lot of fun!

I was overjoyed to get out to lunch for Chinese and it was so good!

For my first plate I had Teriyaki Chicken, Potstickers, Cream Cheese Wonton, Stuffed Mushrooms, Chicken Mushroom Stirfry and a Diet Pepsi.

My second plate was Salmon, Shrimp and Chicken Broccoli Stirfry.

For dessert I splurged and made a giant Oreo Ice Cream Sandwich:D


Went back to work and had Lotus Notes Restore training for about an hour...it was all explained very thoroughly. I caught on real quick and it was a breeze for me.

Took a much needed break at 2:30pm and got out in the gorgeous weather and enjoyed myself for awhile. I was sublimely happy and really didn't want to go back to work after that!!!

Came back in and craved ice cream so I went into the freezer and got out my Edy's No Sugar Added Cookies 'N Cream and went a bit overboard. I think that ice cream sandwich earlier triggered my craving:(

Our organic egg farmer, Kenny brought me a dozen eggs...so I took them and headed home to make dinner. Looked through the fridge and freezer for some inspiration...

I made a perfectly moist, five cheese spinach quiche with sauteed onions!

(Cheddar, Mozzarella, Parmesan, Ricotta and Romano)

01.21.09 Brunch at Romano's Macaroni Grill

Got in 7 hours of sleep and drove over to my mom's and her, my sis & I went out for Brunch at Romano's Macaroni Grill.

I had the Garden Salad with Peppercorn Ranch on the side, Three crab stuffed mushrooms (did not eat any garlic toast), and the Skinny Chicken with Tomatoes, Broccoli and Asparagus and a Diet Coke.

01.08.09 Dinner at Sgt. Pepper's

We had the enormous task of loading our adjustable bed and Angie's matress into the truck. 

We felt famished after that so we headed out to eat dinner at Sgt. Pepper's since we had a $25 gift certificate there. 

We got the Jumbo Shrooms with Beer Cheese Soup for the appetizer. I ate 10 mushrooms with the breading flaked off and about 2 Tbsp of Beer Cheese Soup drizzled over them.

For my entree I got the Pepper Steak Salad with balsamic vinaigrette (beef tenderloin bits over mixed greens with peppers, red onions, tomatoes & pepperjack cheese.)

Then we went to the new place and unloaded the beds...it was very difficult getting that adjustable bed up three flights of stairs. Couldn't of done that without Dave!

It was around 8pm so Angie got ready for bed for the first time at the new place.

Dave and I went back to the old place and packed up his computer and desk. I packed up bedding, clothing, toiletries and the food we would need.

We also picked up our dog, Amanda, and brought her things with us too:)

We got to the new place and unloaded everything and showed Amanda around the new place...she seemed thrilled!

I ate about a cup of Edy's No Sugar Added Cookies N' Cream Ice Cream because there was just that much left in the container and the freezer was packed when I got done unloading food and putting it away.

Finally sleeping at the new place...Hurray!

01.03.09 Lunch at Olive Garden

I arrived at my mom's house around 8am and we created a picture CD with pictures of us and Grandpa. Worked on some documents and got done with them around 9am. 

Then we decided to go out and buy some speakers for her computer since her current ones blew. Went to Office Max and got the speakers, printer paper, CD-R Discs and some colorful tacks. 

We had time to kill before Olive Garden opened so we went to the Dollar Tree and they had some really good Joseph's Sugar Free Oatmeal cookies (95 cal, 5g fat, 1g fiber for 4 cookies).

Then we went to Target and got 6 packs of 9ft long lighted garland 75% off.

Got to Olive Garden at 11am and we split an order of Stuffed Mushrooms (My portion 193 cal, 15g fat!), split the Garden-Fresh Salad (93 cal, 5g fat, 2g fiber) and each had an order of Apricot Venetian Chicken with Asparagus, Broccoli & Tomatoes (448 cal, 11g fat, 4g fiber). 

It was a very delicious meal and we had nice conversation:)

12.24.08 - 12.28.08 Holiday Break, Dinner at Romano's Macaroni Grill

I had a really nice Christmas Break it was wonderful to eat great food and see our family and friends!

We had Christmas Eve at my mom's house. 

We arrived early to help with some of the prep work. Here's Angie plucking grapes.


We had Ham with Mustard, Rolls, Goulash, Three Bean Hotdish, a Veggie Tray, Potato Salad, Deviled Eggs, Cantaloupe and Grapes.


We had cupcakes for dessert. I only had one:)

My mom made some punch with Orange Juice, Diet 7UP and some Orange Sorbet. 

It was a really nice Christmas meal. After that we opened presents while my sister played Christmas songs on the piano.

After that we took a drive downtown Saint Paul to see the Christmas lights.

We celebrated Christmas Day at our new house we'll be moving to. 

We made a pasta bake with Dreamfield's Penne Pasta, lean ground beef, celery, onion, no sugar added tomoto sauce and reduced fat cheese. 

For dessert we had NSA pumpkin pie and NSA vanilla ice cream. 

We watched the season finale of Biggest Loser since we hadn't had time to. We were so happy that Michelle won - she really deserved it!

Later on we snacked on some of the delicious Pumpkin Bars my mom made!



My stepdaughter Angie and I went shopping the next day for after Christmas Sale deals. 

We ate at Romano's Macaroni Grill because we had a coupon for a free appetizer. We ordered the stuffed mushrooms for the appetizer and Angie got the Portobello Chicken and I got the Skinny Chicken with tomatoes, broccoli & asparagus.



Saturday morning at my laptop I had an Apple Pie Larabar.


For lunch we went back to work on our new place and had the leftover pasta bake and NSA pumpkin pie and NSA ice cream.

For dinner we overindulged and went to Old Country Buffet. I started with a small taco salad, then I had a plate fish and green beans, then a plate of steak with horseradish sauce and roasted red peppers and for dessert I had a fat free, sugar free ice cream bowl with apples mixed in.

Sunday morning I was at my laptop again and had a Cherry Pie Larabar.

For lunch I went over to my mom's to help her setup her new HP printer. She fixed me a large salad with ham, mozzerella cheese, green peppers, cucumbers, and Mrs. Dash. I also had some leftover Three Bean Hotdish, a Diet Dr. Pepper, and another one of those Christmas Cupcakes pictured above.

Later on we had Angie's cousin Alyssia over and went to our favorite Chinese Buffet, China Chef. I ate way too much there. I tried to eat more of their lighter fare like Ginger Chicken Broccoli, Steak and Mushroom and Shrimp Stir Fry but I ended up having quite a few eggrolls, cream cheese wontons, and a little Sesame Chicken. For dessert I had pineapple, peaches and a few Almond Cookies with vanilla pudding.
