07.10.09 Brunch, Dinner and Snacks

My portion of the Spinach quiche I made for breakfast.

Snacked on some Kashi TLC Country Cheddar Crackers.

Lunch was a quick Choco-walla Odwalla Bar.

Dinner was Mustard Chicken Veggie Couscous.

Dessert was a Klondike Krunch Bar.

05.29.09 Breakfast, Lunch & Dinner

Back to work all weekend through Monday. Only got in 6 hours of sleep from 10pm-4am. Got dressed, grabbed a Kashi bar and headed to work.

Got there on time and ate my Pumpkin Pie Kashi bar for breakfast.

Had a very busy Friday morning with Citrix, Peoplesoft, Siteminder, Terminal Server and UNIX issues. Also had blade server training but that was actually a lot of fun!

I was overjoyed to get out to lunch for Chinese and it was so good!

For my first plate I had Teriyaki Chicken, Potstickers, Cream Cheese Wonton, Stuffed Mushrooms, Chicken Mushroom Stirfry and a Diet Pepsi.

My second plate was Salmon, Shrimp and Chicken Broccoli Stirfry.

For dessert I splurged and made a giant Oreo Ice Cream Sandwich:D


Went back to work and had Lotus Notes Restore training for about an hour...it was all explained very thoroughly. I caught on real quick and it was a breeze for me.

Took a much needed break at 2:30pm and got out in the gorgeous weather and enjoyed myself for awhile. I was sublimely happy and really didn't want to go back to work after that!!!

Came back in and craved ice cream so I went into the freezer and got out my Edy's No Sugar Added Cookies 'N Cream and went a bit overboard. I think that ice cream sandwich earlier triggered my craving:(

Our organic egg farmer, Kenny brought me a dozen eggs...so I took them and headed home to make dinner. Looked through the fridge and freezer for some inspiration...

I made a perfectly moist, five cheese spinach quiche with sauteed onions!

(Cheddar, Mozzarella, Parmesan, Ricotta and Romano)
