02.06.09 Dinner

Got home and got started on dinner right away. 

I looked in the cupboard for some inspiration and picked the Near East Mushroom Couscous. I used my enameled cast iron casserole to heat up the 1 1/4 cups of water and 1 Tbsp Olive Oil...brought it to a boil, stirred in the couscous, stirred in 8oz of baby bella mushrooms, took it off the heat, covered the pot and let it sit for 5 minutes and voila...perfectly moist and aromatic couscous.

I fried up and crumbled four turkey burgers and steamed 1 lb of broccoli. Added this to the couscous mixture and added 2/3 cup cheese and then warmed it all up.

(465 cal, 18g fat, 11g fiber, 36g protein) 

After we ate dinner we ended up watching House and it was a really good episode...Cuddy was on the ball playing tricks on House...very entertaining!

After House we had dessert...a 100 calorie Zesty Lemon Cookie from World Market.

Bedtime was 9pm since I work Saturday morning from 6am - 3:45pm...I get off work a bit early so I can make it to our company party at 5:30pm:)
